This recipe comes from my friend Lauren. Her mother,Mrs. Jackson, used to give us a sample of her whipped shortbread , at Christmas,when we were teenagers. She would pile them into an empty card box and I thought they looked so beautiful. I would sneak one here and there till they were gone. Finally, it became apparent that we should possibly ask for the recipe. Best thing we ever did.......
1 lb soft butter, 1 cup icing sugar, 3 cups flour, 1/2 cup cornstarch, 1 tsp vanilla.
Bit with mixmaster till the consistency of whipped cream. Try not to sample....or you won't have any shortbread.....I just randomly thru in a couple of pics of Bo in the new basket I got from the Free Trade Fair, and of Spencer, hanging out on top of the arbour. You have to let the mixmaster beat the batter for at least 10 minutes. This gives you plenty of time to go and say hello to any cats hanging about....
I pile the batter into a funnerl and press out onto cookie sheets. I'm not too fussy, just have fun. You can also use a teaspoon.
Add dragrees, if you wish, or leave plain. Don't have to eat the dragrees. They look soooo nice.Bake about 10 minutes at 350 . Keep a slight eye on them. Meanwhile you can go outside and say hello to visiting cats while waiting for them to bake.
When done the shortbread should be dry and slightly edged pale brown around the edges. Freeze great in ice cream pails. Can drizzle with chocolate if you wish, but then you will not get the pure light sensation of whipped shortbread. Whipped. Not stirred.
