Thanksgiving Blueberry Coffee Cake

 THANKSGIVING BLUEBERRY/CRANBERRY COFFEE CAKE...... Turn oven on to 350 degrees
 COMBINE: in a a bowl: 2 cups flour
                                    ½ cup sugar
                                    3 tsp baking powder
                                    Pinch salt
 BEAT till frothy : 2 eggs
If you have a 9 inch tube pan, grease it and get ready for the batter. If you don't have a tube pan you can use a 9x13 pan,but it's not quite the same.
 These should be beaten till lemon coloured, and fairly thick. As if you were making a sponge.

 ADD:  ¼ cup oil, ¾ cup orange juice or milk to the frothy eggs
 Mix, by hand,  the WET With the Dry Ingredients.,
 Do not over mix.
FOLD IN:  1 ½ cups blueberries/cranberries
 At this point you can also throw in a handful of raspberries, or more cranberries.

 Pile into veggie sprayed 9 inch tube pan. Smooth the batter on top.
 
 Bake at 350 for about 50 minutes or so. I found I had to add a few minutes.
  Test with sharp knife to make sure  the coffee cake is done.

 This coffee cake freezes very well. It's easy to make. Has few ingredients. Travels well. And shares well.
