September Apple Cake

 First day of September. The sunflowers are the last thing to tower above, and the apples are plopping from the trees. The kids are going back to school and Christmas looms on the horizon.....(but let's not get ahead of things....) We always make cider and wine with whatever apples we get from the trees.  This year there  are so many apples that we can give tons away, make wine AND cider, and still have enough for Apple Cake.
 First grate a few apples. I don't really measure . But about 3 apples will work. Or 4....
 Sprinkle with a bit of lemon juice to keep from browning. Be sure you have set your oven to 350 and let preheat.
 NEXT: Beat up 2 eggs with a pinch of salt, and a tsp of vanilla extract.....

 Combine 1 1/4 cups flour, 1 tsp baking soda, 1/2 cup walnuts if you wish, and 1 tsp cinnamon
 Beat all together with  a little water , or apple juice, or milk to combine.
 Sometimes I leave out the cinnamon.
 Sometimes I add a pinch of nutmeg. Not crazy about  cinnamon.

 Meanwhile, you can take apart sunflower heads and rip out the seeds to save for next year to plant in the dirt. Or you can do up your xmas card list......multi-tasking is  the way to go.
 Grate more apples, cause you were most likely snacking on the apples you originally prepared.

 NEXT: Plop  the batter into a 9 inch  cake pan you have sprayed with veggie spray.
 Smooooooth out the batter.  Spread with the grated apples.
 Bake at 350 till done.....test with a sharp knife. I doubled the recipe and put it into a  9x13 pan and baked for about 35 -40 minutes. This can also go into muffin pans and baked as well.

 While the cake was cooling I went outside and talked to Spencer.  He was quite sleepy, so I went back inside to make the frosting.  It doesn't need frosting, but you can make it to have on hand.
 FROSTING: 1 cup butter, 2 cups icing sugar, vanilla extract, pinch salt, extra milk to mix. You can make this up and freeze it to use at a later date if you want.  Or slather it on the cake and enjoy.
